Instructions

  1. Start by creating the crust. In a medium bowl, combine the almond flour, cocoa powder (if using), erythritol, melted butter, and a pinch of salt. Mix everything until it resembles damp sand. Press this mixture into the bottom of your springform pan, ensuring an even layer.
  2. Now, let’s move on to the filling. In a large mixing bowl, beat the softened cream cheese until smooth using a hand mixer. Gradually add in the erythritol, mixing well until it’s nicely combined. Then, throw in the eggs one at a time, mixing after each addition to ensure everything’s well incorporated. You can also add the vanilla extract and lemon juice at this stage for extra flavor.
