Ingredients

  • 2 medium zucchini
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (or gluten-free alternative)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil (or melted butter)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). While it’s heating, wash and dry your zucchini. Cut them into thin, even slices, about ¼ inch thick.
  2. In a large mixing bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix everything until well combined.
  3. On a baking sheet lined with parchment paper, arrange the sliced zucchini in a single layer. Lightly drizzle with olive oil.
  4. Using your hands, sprinkle the breadcrumb-Parmesan mixture over each zucchini slice, coating them well.
  5. Bake in your preheated oven for about 20-25 minutes or until the zucchini is tender and the tops are golden and crispy.
  6. Once baked, remove them from the oven and let them cool for a couple of minutes. Garnish with fresh parsley.
