- 4 large chicken breasts (boneless, skinless)
- 1 packet ranch dressing mix (about 1 ounce)
- 1 cup buttermilk (or yogurt for a thicker coating)
- 1 cup mozzarella cheese (shredded)
- ½ cup breadcrumbs (optional for crunch)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the buttermilk and ranch dressing mix in a large bowl, whisking until well-blended.
- Add the chicken breasts to the mixture and marinate for at least 30 minutes, or overnight for optimal flavor.
- Drizzle olive oil in a baking dish and spread it evenly.
- Remove the chicken from the marinade, allowing excess to drip off, and place in the baking dish.
- Sprinkle garlic powder, onion powder, salt, and pepper over the chicken.
- If using breadcrumbs, sprinkle them over the top of the chicken for added crunch.
- Top with shredded mozzarella cheese to cover each piece generously.
- Bake for about 30-35 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for a few minutes and garnish with fresh parsley before serving.
Notes
For a lighter option, use low-fat buttermilk or Greek yogurt. Chicken can be substituted with cauliflower steaks for a vegetarian dish.
