Ingredients

  • 4 large chicken breasts (boneless, skinless)
  • 1 packet ranch dressing mix (about 1 ounce)
  • 1 cup buttermilk (or yogurt for a thicker coating)
  • 1 cup mozzarella cheese (shredded)
  • ½ cup breadcrumbs (optional for crunch)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the buttermilk and ranch dressing mix in a large bowl, whisking until well-blended.
  3. Add the chicken breasts to the mixture and marinate for at least 30 minutes, or overnight for optimal flavor.
  4. Drizzle olive oil in a baking dish and spread it evenly.
  5. Remove the chicken from the marinade, allowing excess to drip off, and place in the baking dish.
  6. Sprinkle garlic powder, onion powder, salt, and pepper over the chicken.
  7. If using breadcrumbs, sprinkle them over the top of the chicken for added crunch.
  8. Top with shredded mozzarella cheese to cover each piece generously.
  9. Bake for about 30-35 minutes or until the internal temperature reaches 165°F (75°C).
  10. Let the chicken rest for a few minutes and garnish with fresh parsley before serving.

Notes

For a lighter option, use low-fat buttermilk or Greek yogurt. Chicken can be substituted with cauliflower steaks for a vegetarian dish.
