- 2 ripe bananas, mashed
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1 cup chocolate chips or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the mashed bananas and vanilla extract to the butter mixture. Mix well until combined.
- Crack the egg into the bowl and mix until fully integrated.
- Whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon in another bowl.
- Gradually add the dry ingredients to the wet ingredients and stir gently until just combined.
- Fold in the chocolate chips or walnuts if using.
- Scoop the dough onto the prepared baking sheets, leaving space between each cookie.
- Bake for about 10-12 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheets before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week. They can also be refrigerated for two weeks or frozen for three months.
