Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 cup chocolate chips or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the mashed bananas and vanilla extract to the butter mixture. Mix well until combined.
  4. Crack the egg into the bowl and mix until fully integrated.
  5. Whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon in another bowl.
  6. Gradually add the dry ingredients to the wet ingredients and stir gently until just combined.
  7. Fold in the chocolate chips or walnuts if using.
  8. Scoop the dough onto the prepared baking sheets, leaving space between each cookie.
  9. Bake for about 10-12 minutes, or until the edges are lightly golden.
  10. Allow cookies to cool on the baking sheets before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. They can also be refrigerated for two weeks or frozen for three months.
