  • 1/3 cup melted butter
  • 1 large egg

  • 1/2 cup all-purpose flour (for crumb topping)
  • 1/4 cup brown sugar, packed
  • 1/4 cup rolled oats
  • 1/4 cup cold butter, cubed
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the melted butter and granulated sugar in a mixing bowl. Mix until well incorporated.
  3. Add the mashed bananas to the sugar mixture, stirring until well blended.
  4. Beat in the egg and vanilla extract, mixing until combined.
  5. Whisk together the baking soda, salt, and flour in a separate bowl. Gradually add to the wet ingredients, stirring gently.
  6. Prepare the crumb topping by mixing the flour, brown sugar, rolled oats, and cinnamon. Add the cold, cubed butter and mix until crumbly.
  7. Pour the banana cake batter into a greased 9-inch square baking pan, smoothing the top.
  8. Sprinkle the crumb topping over the batter, covering it well.
  9. Bake for 45 to 55 minutes, or until a toothpick inserted comes out clean.
  10. Let the cake cool in the pan for about 10 minutes before transferring to a wire rack.
  11. Slice and serve warm or at room temperature.

Notes

For healthier alternatives, consider using coconut sugar, vegetable oil, or almond flour. Can be served with whipped cream or ice cream.
