Instructions
- Preheat your oven to 350°F (175°C).
- Combine the melted butter and granulated sugar in a mixing bowl. Mix until well incorporated.
- Add the mashed bananas to the sugar mixture, stirring until well blended.
- Beat in the egg and vanilla extract, mixing until combined.
- Whisk together the baking soda, salt, and flour in a separate bowl. Gradually add to the wet ingredients, stirring gently.
- Prepare the crumb topping by mixing the flour, brown sugar, rolled oats, and cinnamon. Add the cold, cubed butter and mix until crumbly.
- Pour the banana cake batter into a greased 9-inch square baking pan, smoothing the top.
- Sprinkle the crumb topping over the batter, covering it well.
- Bake for 45 to 55 minutes, or until a toothpick inserted comes out clean.
- Let the cake cool in the pan for about 10 minutes before transferring to a wire rack.
- Slice and serve warm or at room temperature.
Notes
For healthier alternatives, consider using coconut sugar, vegetable oil, or almond flour. Can be served with whipped cream or ice cream.
