  • 1 cup seasoned bread crumbs (or gluten-free bread crumbs)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup minced onion
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1 teaspoon dried dill weed (or 1 tablespoon fresh dill)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup melted butter (or olive oil for a healthier option)
  • Optional: 1/4 teaspoon crushed red pepper flakes for a spicy kick

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the thawed and well-drained spinach, seasoned bread crumbs, grated Parmesan cheese, minced onion, and garlic in a mixing bowl.
  3. Add the beaten eggs to your mixture.
  4. Sprinkle in the dill weed, salt, pepper, and melted butter. If desired, toss in the crushed red pepper flakes.
  5. Mix everything until well incorporated.
  6. Shape the mixture into bite-sized balls, about one inch in diameter.
  7. Arrange the spinach balls on a baking sheet lined with parchment paper.
