- 2 large eggs, beaten
- 1 teaspoon dried dill weed (or 1 tablespoon fresh dill)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup melted butter (or olive oil for a healthier option)
- Optional: 1/4 teaspoon crushed red pepper flakes for a spicy kick
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the thawed and well-drained spinach, seasoned bread crumbs, grated Parmesan cheese, minced onion, and garlic in a mixing bowl.
- Add the beaten eggs to your mixture.
- Sprinkle in the dill weed, salt, pepper, and melted butter. If desired, toss in the crushed red pepper flakes.
- Mix everything until well incorporated.
- Shape the mixture into bite-sized balls, about one inch in diameter.
- Arrange the spinach balls on a baking sheet lined with parchment paper.
- Bake for about 20 minutes, or until the tops are golden brown and crispy.
- Allow the spinach balls to cool for a few minutes before serving.
Notes
For a vegan version, replace the eggs with flax eggs and use nutritional yeast in place of Parmesan cheese. Ensure spinach is well-drained to avoid sogginess.
