- 3 large tomatoes, sliced (the juicier, the better)
- 1 teaspoon kosher salt (plus more to taste)
- 1/4 teaspoon black pepper
- 1/2 cup mayonnaise
- 1 cup shredded cheese (sharp cheddar or a blend)
- 1/4 cup fresh basil (chopped, or 1 tablespoon dried basil)
- 1 tablespoon Dijon mustard (optional)
- 1 tablespoon olive oil (for brushing crust)
- 1/4 teaspoon garlic powder (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice your tomatoes thickly and sprinkle them with kosher salt. Let them sit in a colander for about 10 minutes.
- In a medium bowl, mix together the mayonnaise, shredded cheese, black pepper, garlic powder (if using), and basil.
- Pat the tomatoes dry with paper towels before layering them into the prepared pie crust.
- Spread an even layer of the cheese mixture over the tomatoes.
- If you opted to include Dijon mustard, spread it thinly over the crust before placing the tomatoes.
- Brush the edges of the pie crust with olive oil.
- Bake the pie in your preheated oven for about 40 minutes, or until the crust is golden and the top is bubbling.
- Once out of the oven, allow the pie to cool for about 15 minutes.

For gluten-free options, use a gluten-free pie crust. You can swap mayonnaise for Greek yogurt or try different cheeses for unique flavors.
