  • 3 large tomatoes, sliced (the juicier, the better)
  • 1 teaspoon kosher salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1 cup shredded cheese (sharp cheddar or a blend)
  • 1/4 cup fresh basil (chopped, or 1 tablespoon dried basil)
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon olive oil (for brushing crust)
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice your tomatoes thickly and sprinkle them with kosher salt. Let them sit in a colander for about 10 minutes.
  3. In a medium bowl, mix together the mayonnaise, shredded cheese, black pepper, garlic powder (if using), and basil.
  4. Pat the tomatoes dry with paper towels before layering them into the prepared pie crust.
  5. Spread an even layer of the cheese mixture over the tomatoes.
  6. If you opted to include Dijon mustard, spread it thinly over the crust before placing the tomatoes.
  7. Brush the edges of the pie crust with olive oil.
  8. Bake the pie in your preheated oven for about 40 minutes, or until the crust is golden and the top is bubbling.
