Description

A warm, homemade blueberry cobbler with a golden biscuit-like topping, perfect for any occasion.


Ingredients

  • 4 cups fresh blueberries (or 2 cups frozen blueberries)
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk (whole or 2% preferred)
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Optional: 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the blueberries, 1/2 cup of sugar, lemon juice, and cornstarch in a mixing bowl.
  3. Mix the flour, baking powder, salt, and remaining 1/2 cup of sugar in another bowl.
  4. Pour in the milk, melted butter, and vanilla extract into the dry mixture.
  5. Pour the blueberry mixture into a greased 9×13-inch baking dish.
  6. Bake in the preheated oven for 30-35 minutes.
  7. Allow the cobbler to cool before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers in an airtight container.
