  • 4 boneless, skinless chicken thighs
  • 1 cup fresh pineapple, diced
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce (or tamari for a gluten-free option)
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon green onions, sliced (for garnish)
  • Salt to taste

Instructions

  1. Start by dicing the fresh pineapple into small pieces. Set it aside for later.
  2. Heat the olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt and black pepper.
  3. Add the chicken thighs to the skillet and sear for about 4-5 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set it aside. In the same skillet, lower the heat and add minced garlic and grated ginger, stirring until fragrant—about 30 seconds.
  5. Add brown sugar and soy sauce into the skillet, stirring continuously to combine.
  6. Toss in the diced pineapple, allowing it to cook with the sauce for 3-4 minutes.
  7. Return the chicken to the skillet, coating it with the sauce. Let it simmer for another 5 minutes.
  8. Serve hot and garnish with sliced green onions.

Notes

For a healthier version, consider using coconut sugar instead of brown sugar or swap chicken thighs for chicken breasts.
