- 4 boneless, skinless chicken thighs
- 1 cup fresh pineapple, diced
- 1/2 cup brown sugar
- 1/4 cup soy sauce (or tamari for a gluten-free option)
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon green onions, sliced (for garnish)
- Salt to taste
Instructions
- Start by dicing the fresh pineapple into small pieces. Set it aside for later.
- Heat the olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt and black pepper.
- Add the chicken thighs to the skillet and sear for about 4-5 minutes on each side until golden brown.
- Remove the chicken from the skillet and set it aside. In the same skillet, lower the heat and add minced garlic and grated ginger, stirring until fragrant—about 30 seconds.
- Add brown sugar and soy sauce into the skillet, stirring continuously to combine.
- Toss in the diced pineapple, allowing it to cook with the sauce for 3-4 minutes.
- Return the chicken to the skillet, coating it with the sauce. Let it simmer for another 5 minutes.
- Serve hot and garnish with sliced green onions.
Notes
For a healthier version, consider using coconut sugar instead of brown sugar or swap chicken thighs for chicken breasts.
