Description

A vibrant and fresh Bruschetta Dip that’s easy to prepare and perfect for parties.

Ingredients

Scale
  • 2 cups diced tomatoes (ideally Roma or vine-ripened)
  • 1 cup fresh mozzarella, diced (or bocconcini)
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup red onion, finely diced
  • 23 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 1/4 cup olive oil (extra virgin)
  • Salt and black pepper to taste
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Begin by washing and dicing your tomatoes. Remove the seeds for a less watery dip.
  2. Finely chop your fresh basil leaves.
  3. In a large mixing bowl, combine the diced tomatoes, mozzarella, chopped basil, red onion, and minced garlic.
  4. Drizzle balsamic vinegar and olive oil over the mixture.
  5. Season with salt, black pepper, and red pepper flakes if using.
  6. For best results, allow the dip to chill in the fridge for at least 30 minutes.

Notes

For a healthier option, consider using low-fat cheese or serving with veggies instead of chips.
