Ingredients

- 2 cups diced tomatoes (ideally Roma or vine-ripened)
- 1 cup fresh mozzarella, diced (or bocconcini)
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup red onion, finely diced
- 2–3 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 1/4 cup olive oil (extra virgin)
- Salt and black pepper to taste
- 1 teaspoon red pepper flakes (optional)
Instructions
- Begin by washing and dicing your tomatoes. Remove the seeds for a less watery dip.
- Finely chop your fresh basil leaves.
- In a large mixing bowl, combine the diced tomatoes, mozzarella, chopped basil, red onion, and minced garlic.
- Drizzle balsamic vinegar and olive oil over the mixture.
- Season with salt, black pepper, and red pepper flakes if using.
- For best results, allow the dip to chill in the fridge for at least 30 minutes.
