- 1 pound of sausage (beef, chicken, or turkey)
- 4 medium-sized potatoes, diced (Yukon Gold recommended)
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 4 cups chicken broth (or vegetable broth)
- 1 cup heavy cream (or coconut milk)
- 2 tablespoons Cajun seasoning (to taste)
- 1 tablespoon olive oil (or vegetable oil)
- Salt, to taste
- Pepper, to taste
- Optional toppings: green onions or parsley, shredded cheese, sour cream
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds.
- Add the sausage, cut into bite-sized pieces. Sauté until browned, about 5-7 minutes.
- Stir in the diced potatoes and pour in the chicken broth. Add Cajun seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer uncovered until the potatoes are tender, about 15-20 minutes.
- Reduce heat to low and stir in the heavy cream. Simmer for an additional 5 minutes to meld flavors.
- Taste and adjust seasoning as needed. Ladle the soup into bowls and garnish with green onions or parsley, if desired.
Notes
For a vegetarian option, use plant-based sausage and vegetable broth. For a low-carb version, replace potatoes with cauliflower.
