- 4 ears of fresh corn, husked
- 1/4 cup unsalted butter, softened
- 1/4 cup mayonnaise
- 1 lime, zested and juiced
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/4 cup crumbled feta cheese or cotija cheese (optional)
- Salt to taste
- Fresh cilantro or parsley, chopped for garnish
Instructions
- Start by heating a large pot of water over medium-high heat. Once boiling, generously salt it.
- While waiting for the water to boil, husk the corn, removing all green leaves and silks.
- Once the water is boiling, carefully add the corn. Cook for about 8-10 minutes until tender.
- While the corn cooks, prepare the buttery mixture by combining softened butter, mayonnaise, lime juice, lime zest, smoked paprika, chili powder, and salt in a bowl.
- Once the corn is cooked, remove it from the pot and let it cool for a few minutes.
- Slather the corn with the creamy mixture, ensuring it’s well covered.
- If using, sprinkle crumbled cheese over the corn, followed by a drizzle of lime juice and chopped cilantro or parsley for garnish.
Notes
