Ingredients

  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well blended.
  3. Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  6. Fold in the grated carrots and crushed pineapple. If adding nuts, mix them in.
  7. Pour the batter into the prepared baking dish and bake for 30 to 35 minutes, or until a toothpick comes out clean.
  8. Once baked, remove from the oven and let cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

For a vegan twist, use flax eggs. Substitute coconut sugar for lower glycemic index options.
