Description

A delightful casserole that combines the crispy joy of pizza with nutritious zucchini, perfect for weeknight meals and lunchboxes.


Ingredients

  • 4 medium-sized zucchinis, shredded
  • 2 cups shredded mozzarella cheese (plus extra for topping)
  • 1 cup shredded cheddar cheese
  • 1 cup pizza sauce
  • 1/2 cup onion, finely chopped
  • 1/2 cup bell pepper, diced
  • 1 cup mushrooms, sliced (optional)
  • 1/2 cup pepperoni or turkey bacon, chopped (optional)
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded zucchini with a pinch of salt and let it sit for 10 minutes.
  3. Squeeze out excess water from the zucchini using a clean dish towel.
  4. Whisk together eggs, mozzarella, cheddar, Parmesan, garlic powder, and Italian seasoning in a bowl.
  5. Fold the squeezed zucchini, onion, bell pepper, mushrooms, and optional meat into the cheese mixture.
  6. Grease a 9×13 inch baking dish and pour the mixture into the dish.
  7. Pour the pizza sauce over the top and sprinkle extra mozzarella cheese.
  8. Bake for 30-35 minutes until browned and bubbly.
  9. Let cool for 5–10 minutes before slicing and serving.

Notes

For a healthier option, substitute low-fat cheese or omit meats for a vegetarian version.
