- 4 medium-sized zucchinis, shredded
- 2 cups shredded mozzarella cheese (plus extra for topping)
- 1 cup shredded cheddar cheese
- 1 cup pizza sauce
- 1/2 cup onion, finely chopped
- 1/2 cup bell pepper, diced
- 1 cup mushrooms, sliced (optional)
- 1/2 cup pepperoni or turkey bacon, chopped (optional)
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded zucchini with a pinch of salt and let it sit for 10 minutes.
- Squeeze out excess water from the zucchini using a clean dish towel.
- Whisk together eggs, mozzarella, cheddar, Parmesan, garlic powder, and Italian seasoning in a bowl.
- Fold the squeezed zucchini, onion, bell pepper, mushrooms, and optional meat into the cheese mixture.
- Grease a 9×13 inch baking dish and pour the mixture into the dish.
- Pour the pizza sauce over the top and sprinkle extra mozzarella cheese.
- Bake for 30-35 minutes until browned and bubbly.
- Let cool for 5–10 minutes before slicing and serving.
Notes
For a healthier option, substitute low-fat cheese or omit meats for a vegetarian version.
