  • 1 cup cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Fresh cilantro, chopped (optional)
  • Lime wedges (for serving)

Instructions

  1. Start by shredding your cooked chicken if you haven’t done so already.
  2. Combine the shredded chicken, cooked rice, black beans, corn, diced avocado, chili powder, cumin, salt, and pepper in a large mixing bowl.
  3. Heat a large skillet over medium heat, lay a tortilla flat, and scoop a portion of the mixture into the center.
  4. Fold the sides of the tortilla over the filling and roll tightly from the bottom up, placing it seam-side down in the heated skillet.
  5. Cook each burrito for about 2-3 minutes on each side until golden and crispy.
  6. Remove from the skillet and let cool for a minute, then slice in half diagonally and serve warm with fresh cilantro and lime wedges.
