- 1.5 pounds boneless, skinless chicken thighs
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon smoked paprika

- 1 teaspoon ground cinnamon
- Salt and black pepper to taste
- 3 tablespoons olive oil
- Juice of 1 lemon
- 1 cup mayonnaise (for garlic sauce)

- Pita bread or flatbreads for serving
- Fresh vegetables (lettuce, tomatoes, cucumbers, red onions) for serving

Instructions
- Marinate the chicken by mixing garlic, cumin, coriander, smoked paprika, turmeric, cayenne pepper, cinnamon, salt, black pepper, olive oil, and lemon juice in a bowl. Add chicken thighs and coat well, then cover and refrigerate for at least 30 minutes.
- Prepare the garlic sauce by whisking together mayonnaise, minced garlic, lemon juice, and a pinch of salt in a bowl. Adjust seasoning if necessary and set aside in the fridge.
- Preheat the grill or skillet over medium-high heat. Remove marinated chicken and cook for about 6-8 minutes on each side until fully cooked and charred.
- Slice the cooked chicken thinly against the grain after resting for a few minutes.
- Warm the pita or flatbreads on the grill for about 1 minute on each side.
- Assemble the shawarma by placing sliced chicken on pita, drizzling with garlic sauce, and adding fresh vegetables and parsley or cilantro.
Notes
For a healthier version, consider using Greek yogurt instead of mayonnaise for the garlic sauce.
