Ingredients

  • 1.5 pounds boneless, skinless chicken thighs
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground cinnamon
  • Salt and black pepper to taste
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 1 cup mayonnaise (for garlic sauce)
  • 4 cloves garlic, minced (for garlic sauce)
  • 2 tablespoons lemon juice (for garlic sauce)
  • Salt to taste (for garlic sauce)
  • Pita bread or flatbreads for serving
  • Fresh vegetables (lettuce, tomatoes, cucumbers, red onions) for serving
  • Pickles (optional)
  • Fresh parsley or cilantro for garnish

Instructions

  1. Marinate the chicken by mixing garlic, cumin, coriander, smoked paprika, turmeric, cayenne pepper, cinnamon, salt, black pepper, olive oil, and lemon juice in a bowl. Add chicken thighs and coat well, then cover and refrigerate for at least 30 minutes.
  2. Prepare the garlic sauce by whisking together mayonnaise, minced garlic, lemon juice, and a pinch of salt in a bowl. Adjust seasoning if necessary and set aside in the fridge.
  3. Preheat the grill or skillet over medium-high heat. Remove marinated chicken and cook for about 6-8 minutes on each side until fully cooked and charred.
  4. Slice the cooked chicken thinly against the grain after resting for a few minutes.
  5. Warm the pita or flatbreads on the grill for about 1 minute on each side.
  6. Assemble the shawarma by placing sliced chicken on pita, drizzling with garlic sauce, and adding fresh vegetables and parsley or cilantro.

Notes

For a healthier version, consider using Greek yogurt instead of mayonnaise for the garlic sauce.
