- ½ cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract

- 2 teaspoons ground cinnamon
- Optional: 2 tablespoons white sugar for rolling
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and sugars until fluffy, then mix in egg and vanilla.
- Fold in flour, baking powder, baking soda, salt, and cinnamon until just combined.
- Scoop dough into balls, roll in optional sugar, and place on baking sheet.
- Bake 10–12 minutes until edges are set but centers are soft. Cool on wire rack.
