Description

Ingredients

  • 1 cup of rolled oats
  • 1 cup of warm water
  • 1/2 cup of honey
  • 1/4 cup of melted butter or coconut oil
  • 2 large eggs
  • 1 cup of all-purpose flour
  • 1 cup of whole wheat flour
  • 1 tablespoon of baking powder
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of salt
  • Optional: 1/4 teaspoon of nutmeg
  • Optional: 1/2 cup of chopped walnuts or pecans
  • Optional: 1/4 cup of raisins or dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C) and soak the rolled oats in warm water.
  2. Whisk together the melted butter, honey, and eggs until combined, then add the soaked oats.
  3. Combine the all-purpose flour, whole wheat flour, baking powder, cinnamon, salt, and nutmeg in a separate bowl.
  4. Fold the wet ingredients into the dry ingredients gently to avoid overmixing.
  5. Add nuts or dried fruits if using and mix gently.
  6. Pour the batter into a greased 9×5-inch loaf pan and spread evenly.
  7. Bake for 45-50 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For a vegan version, replace eggs with flaxseed meal and use maple syrup instead of honey.
