Ingredients

- 1 cup of rolled oats
- 1 cup of warm water
- 1/2 cup of honey
- 1/4 cup of melted butter or coconut oil
- 2 large eggs
- 1 cup of all-purpose flour
- 1 cup of whole wheat flour
- 1 tablespoon of baking powder
- 1 teaspoon of cinnamon
- 1/2 teaspoon of salt
- Optional: 1/4 teaspoon of nutmeg
- Optional: 1/2 cup of chopped walnuts or pecans
- Optional: 1/4 cup of raisins or dried cranberries
Instructions
- Preheat your oven to 350°F (175°C) and soak the rolled oats in warm water.
- Whisk together the melted butter, honey, and eggs until combined, then add the soaked oats.
- Combine the all-purpose flour, whole wheat flour, baking powder, cinnamon, salt, and nutmeg in a separate bowl.
- Fold the wet ingredients into the dry ingredients gently to avoid overmixing.
- Add nuts or dried fruits if using and mix gently.
- Pour the batter into a greased 9×5-inch loaf pan and spread evenly.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For a vegan version, replace eggs with flaxseed meal and use maple syrup instead of honey.
