- 4 boneless, skinless chicken breasts
- 8 ounces sliced mushrooms (button or cremini)
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 3 cloves minced garlic
- 1 medium onion, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 teaspoon fresh thyme or ½ teaspoon dried thyme
- Salt and pepper to taste
- ½ cup grated Parmesan cheese (optional)
- Fresh parsley for garnish (optional)
Instructions
- Warm the olive oil and butter in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper on both sides. Add to the skillet and sear for 5-7 minutes per side until golden brown. Remove and set aside.
- Add the minced garlic and onions to the same skillet and cook until the onions are translucent, about 3-4 minutes.
- Toss in the sliced mushrooms and thyme, sautéing until tender, about 5-6 minutes.
- Pour in the chicken broth, scraping up any bits from the skillet, and let it simmer for 2 minutes.
- Reduce heat to low and add the heavy cream, stirring to combine. If desired, add the Parmesan cheese and let simmer for 5 minutes.
- Return the chicken to the skillet, coating in the sauce, and simmer for 2-3 minutes until warmed through.
- Finish with fresh parsley and serve hot over rice, pasta, or crusty bread.
Notes
For a lighter version, consider using half and half or Greek yogurt instead of heavy cream.
