Description

Succulent chicken pieces enveloped in a rich, creamy mushroom sauce, perfect for impressing loved ones.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 ounces sliced mushrooms (button or cremini)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 3 cloves minced garlic
  • 1 medium onion, finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Warm the olive oil and butter in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper on both sides. Add to the skillet and sear for 5-7 minutes per side until golden brown. Remove and set aside.
  3. Add the minced garlic and onions to the same skillet and cook until the onions are translucent, about 3-4 minutes.
  4. Toss in the sliced mushrooms and thyme, sautéing until tender, about 5-6 minutes.
  5. Pour in the chicken broth, scraping up any bits from the skillet, and let it simmer for 2 minutes.
  6. Reduce heat to low and add the heavy cream, stirring to combine. If desired, add the Parmesan cheese and let simmer for 5 minutes.
  7. Return the chicken to the skillet, coating in the sauce, and simmer for 2-3 minutes until warmed through.
  8. Finish with fresh parsley and serve hot over rice, pasta, or crusty bread.

Notes

For a lighter version, consider using half and half or Greek yogurt instead of heavy cream.
