- 4 boneless, skinless chicken breasts (or thighs for juiciness)
- 1.5 lbs baby potatoes, halved
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 cups low-sodium chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup baby carrots (optional)
- Fresh parsley, chopped (for garnishing)
Instructions
- Start by preparing your ingredients. Rinse and halve the baby potatoes, and chop your onion and garlic.
- In a large mixing bowl, combine the chopped onions, garlic, thyme, rosemary, salt, and pepper. Sauté with olive oil for about two minutes until fragrant (optional).
- Place the chicken breasts at the bottom of your crockpot. Pour the seasoned onion and garlic mixture over the chicken.
- Add the halved potatoes (and carrots if using) directly into the crockpot. Pour the chicken broth over everything.
- Close the lid and set your crockpot to low for 6-8 hours, or high for 3-4 hours.
- When ready, remove the chicken and let it rest for a few minutes before slicing.
Notes
Consider marinating the chicken overnight for extra flavor. For vegetarian options, substitute chicken with chickpeas or lentils.
