Ingredients

  • 4 boneless, skinless chicken breasts (or thighs for juiciness)
  • 1.5 lbs baby potatoes, halved
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup baby carrots (optional)
  • Fresh parsley, chopped (for garnishing)

Instructions

  1. Start by preparing your ingredients. Rinse and halve the baby potatoes, and chop your onion and garlic.
  2. In a large mixing bowl, combine the chopped onions, garlic, thyme, rosemary, salt, and pepper. Sauté with olive oil for about two minutes until fragrant (optional).
  3. Place the chicken breasts at the bottom of your crockpot. Pour the seasoned onion and garlic mixture over the chicken.
  4. Add the halved potatoes (and carrots if using) directly into the crockpot. Pour the chicken broth over everything.
  5. Close the lid and set your crockpot to low for 6-8 hours, or high for 3-4 hours.
  6. When ready, remove the chicken and let it rest for a few minutes before slicing.

Notes

Consider marinating the chicken overnight for extra flavor. For vegetarian options, substitute chicken with chickpeas or lentils.
