Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 1/2 cup of sun-dried tomatoes, chopped (oil-packed recommended)
  • 1 cup of spinach, chopped
  • 1 teaspoon of garlic powder
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup of freshly grated Parmesan cheese
  • 12 ounces of pasta (penne or fettuccine)
  • Fresh basil (for garnish, optional)

Instructions

  1. Start by placing the chicken breasts in the bottom of your slow cooker, spread out evenly.
  2. In a mixing bowl, whisk together the heavy cream and chicken broth, then add sun-dried tomatoes, garlic powder, and Italian seasoning. Pour this mixture over the chicken.
  3. Tuck the chopped spinach around the chicken.
  4. Cover the slow cooker and set it to cook on low for 4–6 hours or high for 2–3 hours.
  5. Once cooked, take the chicken out and shred it with two forks.
  6. Return the chicken to the slow cooker and stir in the Parmesan cheese until creamy.
  7. Mix the cooked pasta into the slow cooker, ensuring it’s enveloped in the sauce.
  8. Garnish with freshly torn basil before serving.
