Description

A delightful dish of tender chicken smothered in a creamy Italian sauce, perfect for romantic dinners or comforting meals.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup fresh basil, chopped
  • Optional: Chicken broth or vegetable broth, for a more flavorful cooking base

Instructions

  1. Start by rinsing your chicken breasts under cold water and patting them dry. Season with salt, black pepper, garlic powder, and Italian seasoning.
  2. Drizzle the olive oil in your crockpot. Place the seasoned chicken breasts in the crockpot, laying them flat.
  3. Add the chopped sun-dried tomatoes on top of the chicken.
  4. Pour the heavy cream over the top of the chicken and sun-dried tomatoes.
  5. Sprinkle the grated Parmesan cheese over everything.
  6. Cover the crockpot with its lid and set it to low for 4 to 6 hours or high for 2 to 3 hours.
  7. Stir in the chopped fresh basil about 30 minutes before serving.

Notes

For healthier variations, consider using chicken thighs, adding more vegetables, or opting for low-fat dairy alternatives.
