Instructions
- Begin by prepping your ingredients. Slice the bell peppers and onion into thin strips. Mince the garlic. If sautéing, heat a tablespoon of olive oil in a skillet over medium heat. Add the sausage and sauté until just browned.
- Once the sausage is browned, add it to the crockpot along with the sliced peppers, onion, and minced garlic.
- Pour in the can of diced tomatoes with their juice, then sprinkle the Italian seasoning, red pepper flakes, salt, and pepper over the top. Stir gently to combine.
- Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours.
- As the cooking nears completion, give the mixture a good stir and taste it—adjust the seasoning if necessary.
- For a fresh touch, sprinkle some chopped parsley on top before serving.
