Instructions

  1. Begin by prepping your ingredients. Slice the bell peppers and onion into thin strips. Mince the garlic. If sautéing, heat a tablespoon of olive oil in a skillet over medium heat. Add the sausage and sauté until just browned.
  2. Once the sausage is browned, add it to the crockpot along with the sliced peppers, onion, and minced garlic.
  3. Pour in the can of diced tomatoes with their juice, then sprinkle the Italian seasoning, red pepper flakes, salt, and pepper over the top. Stir gently to combine.
  4. Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours.
  5. As the cooking nears completion, give the mixture a good stir and taste it—adjust the seasoning if necessary.
