  • Yield: 4 servings 1x

Description

A quick and flavorful teriyaki chicken dish perfect for busy weeknights.

Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs or breasts
  • 1/2 cup soy sauce (low-sodium works best)
  • 1/4 cup honey or brown sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, freshly grated or minced
  • 1 tablespoon cornstarch (optional for thickening)
  • Sesame seeds for garnish
  • Green onions, chopped for garnish
  • Optional: vegetables like bell peppers, broccoli, or snap peas for a stir-fry touch

Instructions

  1. Start by cubing the chicken into bite-sized pieces.
  2. In a separate bowl, whisk together the soy sauce, honey (or brown sugar), rice vinegar, sesame oil, minced garlic, and ginger.
  3. Let the chicken marinate for at least 15 minutes (or up to 2 hours).
  4. Preheat a large skillet over medium-high heat. Add the marinated chicken along with the marinade.
  5. Cook for about 10-12 minutes, stirring occasionally until the chicken is fully cooked through and the sauce is thickened.
  6. To serve, sprinkle sesame seeds and chopped green onions on top.

Notes

For healthier alternatives, substitute with tofu or tempeh and consider using a low-carb sweetener.
