A delicious twist on a classic comfort food, filled with rich flavors of garlic and parmesan.


Ingredients

  • 1 ½ pounds ground beef (or turkey/chicken)
  • 1 cup breadcrumbs (gluten-free if needed)
  • ½ cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 large eggs
  • ½ cup milk (or non-dairy alternative)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • Salt and pepper, to taste
  • Optional: ½ teaspoon red pepper flakes
  • For the glaze: ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the breadcrumbs, ground beef, Parmesan cheese, onion, garlic, eggs, milk, Worcestershire sauce, parsley, salt, and pepper in a large mixing bowl until well mixed but not overmixed.
  3. Transfer the meat mixture into a greased loaf pan and shape it gently into a loaf.
  4. Mix the glaze ingredients in a small bowl; spread over the top of the meatloaf.
  5. Bake for about 1 hour until the internal temperature reaches 160°F (70°C).
  6. Let the meatloaf rest for 10-15 minutes before slicing.

Notes

For a lower-carb option, use crushed pork rinds or oats instead of breadcrumbs. To make it vegetarian, use lentils or plant-based ground.
