Ingredients

- 1 ½ pounds ground beef (or turkey/chicken)
- 1 cup breadcrumbs (gluten-free if needed)
- ½ cup grated Parmesan cheese
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 large eggs
- ½ cup milk (or non-dairy alternative)
- 2 tablespoons Worcestershire sauce
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
- Salt and pepper, to taste
- Optional: ½ teaspoon red pepper flakes
- For the glaze: ½ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the breadcrumbs, ground beef, Parmesan cheese, onion, garlic, eggs, milk, Worcestershire sauce, parsley, salt, and pepper in a large mixing bowl until well mixed but not overmixed.
- Transfer the meat mixture into a greased loaf pan and shape it gently into a loaf.
- Mix the glaze ingredients in a small bowl; spread over the top of the meatloaf.
- Bake for about 1 hour until the internal temperature reaches 160°F (70°C).
- Let the meatloaf rest for 10-15 minutes before slicing.
Notes
For a lower-carb option, use crushed pork rinds or oats instead of breadcrumbs. To make it vegetarian, use lentils or plant-based ground.
