- 2 boneless, skinless chicken breasts
- 1 teaspoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
- 4 flatbreads (pita, naan, or your favorite type)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 bell pepper, diced (red or green)
- 1 cup feta cheese, crumbled
- 1 cup tzatziki sauce (store-bought or homemade)
- Fresh parsley or mint for garnish (optional)
Instructions
- Start by marinating the chicken. In a small bowl, combine olive oil, dried oregano, garlic powder, salt, and pepper. Rub this mixture all over the chicken breasts to infuse them with flavor. Allow the chicken to marinate for at least 10 minutes.
- Preheat your grill or stovetop pan over medium-high heat. Once hot, add the marinated chicken breasts. Cook them for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (75°C).
- While the chicken is resting, prepare your flatbreads. If desired, warm them slightly on the grill or in a skillet for a minute or two.
- Assemble the flatbread. Spread a generous layer of tzatziki sauce on each flatbread, and then layer the sliced chicken, followed by a mix of cherry tomatoes, cucumber, red onion, and bell pepper. Add the crumbled feta cheese on top.
- Garnish with fresh parsley or mint if desired. Slice the flatbreads into quarters for easy serving.
Notes
For a vegetarian option, replace chicken with grilled eggplant or zucchini. Store leftovers separately for up to 3 days.
