  • 4 cups powdered sugar
  • 4 tablespoons fresh lime juice (for icing)
  • 2 teaspoons lime zest (for icing)
  • 12 tablespoons milk or heavy cream (as needed for consistency)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
  2. Cream the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, blending each thoroughly.
  4. Mix in buttermilk, lime juice, and zest, stirring gently. Add green food coloring if desired.
  5. Whisk flour, baking powder, baking soda, and salt in a separate bowl.
  6. Gradually add dry ingredients to wet mixture, stirring until just combined.
  7. Pour the batter into prepared pans and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Cool in pans for 10 minutes, then remove and cool completely on wire racks.
  10. Prepare icing by beating together butter and powdered sugar, adding lime juice and zest until smooth.
  11. Once cakes are cooled, ice between layers, top, and sides. Decorate with extra lime zest.
