- 1–2 tablespoons milk or heavy cream (as needed for consistency)
Instructions
- Preheat the oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
- Cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, blending each thoroughly.
- Mix in buttermilk, lime juice, and zest, stirring gently. Add green food coloring if desired.
- Whisk flour, baking powder, baking soda, and salt in a separate bowl.
- Gradually add dry ingredients to wet mixture, stirring until just combined.
- Pour the batter into prepared pans and smooth the top.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then remove and cool completely on wire racks.
- Prepare icing by beating together butter and powdered sugar, adding lime juice and zest until smooth.
- Once cakes are cooled, ice between layers, top, and sides. Decorate with extra lime zest.
