- 4 boneless, skinless chicken breasts
- 2 ripe California avocados
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 teaspoons garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Start by making the marinade. In a medium-sized bowl, combine olive oil, lime juice, garlic powder, smoked paprika, ground cumin, salt, and pepper. Whisk everything together until the mixture is well blended.
- Place the chicken breasts in a resealable plastic bag or a shallow dish, then pour the marinade over the chicken. Seal the bag or cover the dish with plastic wrap, and let it marinate for at least 15 minutes.
- Preheat your grill to medium-high heat, about 375°F to 400°F.
- Slice the California avocados in half, remove the pit, and scoop out some of the flesh to create a shallow well. Drizzle a little lime juice in each half to prevent browning.
- Once the grill is hot, take the chicken out of the marinade and place it on the grill. Cook for 6-8 minutes on each side until the chicken reaches an internal temperature of 165°F.
- In the last two minutes on the grill, place the avocado halves meat-side down on the grill to achieve lovely grill marks.
- When the chicken is done, remove it from the grill and allow it to rest for a couple of minutes. This resting time helps keep it juicy and flavorful.
- Serve the grilled chicken topped with the grilled avocado halves. For an added touch, sprinkle fresh cilantro over it.
Notes
For a juicier cut, you can substitute chicken breasts with chicken thighs. Marinate the chicken for maximum flavor.
