Description

A vibrant and delicious grilled chicken dish topped with creamy California avocados, perfect for summer cookouts.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 ripe California avocados
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Start by making the marinade. In a medium-sized bowl, combine olive oil, lime juice, garlic powder, smoked paprika, ground cumin, salt, and pepper. Whisk everything together until the mixture is well blended.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish, then pour the marinade over the chicken. Seal the bag or cover the dish with plastic wrap, and let it marinate for at least 15 minutes.
  3. Preheat your grill to medium-high heat, about 375°F to 400°F.
  4. Slice the California avocados in half, remove the pit, and scoop out some of the flesh to create a shallow well. Drizzle a little lime juice in each half to prevent browning.
  5. Once the grill is hot, take the chicken out of the marinade and place it on the grill. Cook for 6-8 minutes on each side until the chicken reaches an internal temperature of 165°F.
  6. In the last two minutes on the grill, place the avocado halves meat-side down on the grill to achieve lovely grill marks.
  7. When the chicken is done, remove it from the grill and allow it to rest for a couple of minutes. This resting time helps keep it juicy and flavorful.
  8. Serve the grilled chicken topped with the grilled avocado halves. For an added touch, sprinkle fresh cilantro over it.

Notes

For a juicier cut, you can substitute chicken breasts with chicken thighs. Marinate the chicken for maximum flavor.
