- 2 large ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup all-purpose or whole wheat flour
- 1/4 cup honey or maple syrup
- 1/3 cup unsweetened applesauce
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup nuts or chocolate chips (optional)
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine the mashed bananas and applesauce in a large mixing bowl. Stir in the honey and vanilla extract until smooth.
- Mix together the dry ingredients: rolled oats, flour, baking powder, baking soda, salt, and cinnamon in another bowl.
- Add the dry mixture to the banana mixture, blending gently until just combined.
- Fold in nuts or chocolate chips if using.
- Spoon the batter into the muffin tin, filling each cup about three-quarters full.
- Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the muffins in the pan for five minutes, then transfer to a wire rack to cool completely.
Notes
Avoid over-mixing to prevent dense muffins. Store in an airtight container for 2-3 days or freeze for 2-3 months.
