Description

Deliciously satisfying muffins made with ripe bananas and wholesome oats, perfect for breakfast or a snack.


Ingredients

  • 2 large ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup all-purpose or whole wheat flour
  • 1/4 cup honey or maple syrup
  • 1/3 cup unsweetened applesauce
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup nuts or chocolate chips (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the mashed bananas and applesauce in a large mixing bowl. Stir in the honey and vanilla extract until smooth.
  3. Mix together the dry ingredients: rolled oats, flour, baking powder, baking soda, salt, and cinnamon in another bowl.
  4. Add the dry mixture to the banana mixture, blending gently until just combined.
  5. Fold in nuts or chocolate chips if using.
  6. Spoon the batter into the muffin tin, filling each cup about three-quarters full.
  7. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the muffins in the pan for five minutes, then transfer to a wire rack to cool completely.

Notes

Avoid over-mixing to prevent dense muffins. Store in an airtight container for 2-3 days or freeze for 2-3 months.
