Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 3 cups cauliflower rice (fresh or frozen)
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup shredded cheddar cheese (or a cheese blend)
  • 1 cup Greek yogurt
  • ½ cup chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tsp olive oil (for sautéing)
  • Optional: Bell peppers, diced; Spinach or kale; Different cheese types; Nutritional yeast

Instructions

  1. Preheat your oven to 375°F (190°C). Heat a skillet over medium heat and add olive oil. Sauté diced onions and minced garlic until fragrant, about 3-4 minutes.
  2. Add cauliflower rice and broccoli florets to the skillet. Cook for an additional 5-7 minutes until slightly tender.
  3. Combine the cooked chicken, sautéed vegetables, Greek yogurt, chicken broth, Italian seasoning, salt, and pepper in a large bowl. Stir until well incorporated.
  4. Transfer the mixture into a greased baking dish and spread it evenly. Sprinkle shredded cheese on top.
  5. Bake in the preheated oven for about 25-30 minutes until hot and bubbly, and the cheese is melty and slightly golden.
  6. Allow the casserole to cool for a few minutes before serving.
