- 1 lb chicken breast, diced
- 4 cups chicken broth (low sodium recommended)
- 2 cups water
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup green beans, chopped
- 1 cup spinach (fresh or frozen)
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 bay leaf
- Salt and pepper to taste
- Olive oil (for sautéing)
Instructions
- Begin by heating a couple of tablespoons of olive oil in a large pot over medium heat.
- Add the diced onion and cook for about 3-4 minutes, until translucent. Then toss in the minced garlic and sauté for another minute until fragrant.
- Next, incorporate the diced chicken breast into the pot and cook until it’s browned on the outside.
- Pour in your chicken broth and water, then add the carrots, celery, and green beans. Bring everything to a gentle boil and reduce it to a simmer.
- Season your soup with thyme, parsley, salt, and pepper, along with a bay leaf for extra richness. Let it simmer for 20 minutes.
- Finally, just a couple of minutes before serving, stir in the fresh or frozen spinach.
Notes
For vegetarian options, substitute chicken with turkey or firm tofu. This soup stores well and can be frozen for up to 3 months.
