A comforting and versatile hobo casserole filled with ground beef, mixed vegetables, and potatoes, perfect for chilly nights.

- 1 pound ground beef or beef sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups mixed vegetables (carrots, peas, green beans, or corn)
- 3–4 medium potatoes, sliced thinly
- 1 can (15 oz) diced tomatoes, with their juice
- 1 can (10.5 oz) cream of mushroom soup
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, brown the ground beef or sausage until it’s fully cooked. Drain any excess fat and add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5-7 minutes.
- Slice your potatoes and prepare the mixed vegetables if using fresh ones. Once the onions are ready, sprinkle in the salt, pepper, garlic powder, and smoked paprika. Mix everything thoroughly.
- Combine the cooked meat mixture, mixed vegetables, and diced tomatoes (with juice) in a large mixing bowl. Fold in the cream of mushroom soup until everything is well-coated.
- Layer half of the potato slices at the bottom of a greased baking dish. Pour the meat mixture on top and spread it out evenly. Finish with the remaining potato slices on top.
- Cover the dish with aluminum foil and bake for about 30 minutes.
- After 30 minutes, remove the foil, sprinkle with cheese if using, and bake for an additional 15 minutes or until the cheese is melted and the potatoes are golden brown.
- Let it cool for a few minutes before serving.
Notes
For a healthier option, substitute ground turkey or chicken for beef, and use low-sodium soup and sweet potatoes instead of regular potatoes.
