Ingredients

  • 1 pound fresh carrots (preferably baby carrots)
  • 3 tablespoons unsalted butter
  • 3 tablespoons honey
  • 23 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley or thyme, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel your carrots. Slice larger carrots into sticks or rounds.
  3. Melt the butter in a small saucepan over low heat, then add the honey and minced garlic. Stir for about 2 minutes.
  4. Place the prepared carrots on a baking sheet lined with parchment paper.
  5. Drizzle the honey-garlic mixture over the carrots and toss until evenly coated.
  6. Season with salt and black pepper to taste.
  7. Spread the carrots in a single layer on the baking sheet.
  8. Roast for about 25 minutes, tossing halfway, until tender and caramelized.
  9. Garnish with fresh parsley or thyme and serve immediately.
