- 3 tablespoons unsalted butter
- 3 tablespoons honey
- 2–3 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
- Fresh parsley or thyme, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel your carrots. Slice larger carrots into sticks or rounds.
- Melt the butter in a small saucepan over low heat, then add the honey and minced garlic. Stir for about 2 minutes.
- Place the prepared carrots on a baking sheet lined with parchment paper.
- Drizzle the honey-garlic mixture over the carrots and toss until evenly coated.
- Season with salt and black pepper to taste.
- Spread the carrots in a single layer on the baking sheet.
- Roast for about 25 minutes, tossing halfway, until tender and caramelized.
- Garnish with fresh parsley or thyme and serve immediately.
