4 chicken thighs (skin-on, bone-in)
1/2 cup pure honey (raw or pasteurized)
1–2 tsp red chili flakes (adjust to taste)
1/2 tsp smoked paprika (optional)
1 tsp garlic powder (optional)
Zest of 1 lemon or orange
Salt and pepper to taste
1 tbsp olive oil or butter
Instructions
Preheat Oven: Preheat oven to 400°F (200°C).
Prepare Chicken: Pat chicken thighs dry, season with salt, pepper, and smoked paprika.
Make Hot Honey Glaze: In a small saucepan over low heat, warm honey. Add chili flakes, garlic powder, and citrus zest. Stir for 3–5 minutes, keeping it gentle—do not overheat.
Glaze Chicken: Brush the chicken thighs generously with the hot honey mixture.
Bake: Place chicken on a baking tray lined with parchment paper. Bake for 30–35 minutes until fully cooked, brushing with extra glaze halfway through.
Serve: Let rest 5 minutes. Drizzle any remaining hot honey over the chicken before serving.
