- 2 cups cooked chicken, shredded or diced
- 1/2 cup cream cheese, softened
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1–2 jalapenos, seeded and finely chopped
- 1/4 cup green onions, chopped
- 1–2 tablespoons lime juice
- Salt and pepper to taste
- Optional: 1/4 cup bacon bits
- Optional: Lettuce leaves for serving
Instructions
- Start by shredding or dicing your cooked chicken.
- In a large mixing bowl, combine the softened cream cheese and mayonnaise. Mix until smooth.
- Next, stir in the chopped jalapenos, shredded cheddar cheese, and green onions.
- Squeeze in the lime juice and season with salt and pepper to taste.
- Fold in your cooked chicken until every piece is well-coated.
- Chill your salad in the refrigerator for about 30 minutes.
- Serve your chicken salad on its own, or on fresh lettuce leaves.
Notes
Allowing the salad to chill enhances the flavor. Use Greek yogurt for a lighter version.
