Description
A quick and vibrant lemon garlic shrimp and asparagus dish that’s perfect for busy weeknights.
Ingredients
Scale
- 1 lb large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 4 cloves garlic, minced
- 1 lemon, juiced (plus extra lemon slices for garnish)
- 3 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional: red pepper flakes, for a spicy kick
Instructions
- Start by preparing your ingredients. Peel and devein your shrimp, then rinse them under cold water. Pat them dry with a paper towel. Next, wash the asparagus and cut it into 2-inch segments. Having everything ready makes cooking a breeze.
- In a large skillet, heat the olive oil over medium-high heat. Once hot, add the minced garlic, stirring it around until it becomes fragrant, usually about 30 seconds. Be careful not to let it burn — burnt garlic can turn bitter, ruining the dish’s flavor.
- Add the shrimp to the skillet, sprinkling in a pinch of salt and pepper. Sauté the shrimp for about 2-3 minutes until they turn pink and opaque. Keep an eye on them to ensure they don’t overcook, which leads to a rubbery texture.
- Once the shrimp is nearly cooked, add the asparagus pieces to the skillet. Stir everything together and cook for an additional 3-4 minutes. The asparagus should be bright green but still slightly crisp.
- Squeeze the fresh lemon juice over the shrimp and asparagus mixture. Toss everything to combine, letting the lemon’s tartness bring the dish to life.
- Taste your creation and adjust the seasoning. If you like a bit of heat, now’s a great time to add red pepper flakes. Garnish with freshly chopped parsley and lemon slices before serving.
Notes
For substitutes, consider using firm fish or vegan options like chickpeas. Serve with quinoa or a side salad for a complete meal.
