  • 1 cup corn (frozen or canned)
  • 1 cup cooked rice (white, brown, or cauliflower rice for a low-carb alternative)
  • 1 packet taco seasoning (or homemade)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 1 ripe avocado, sliced or diced
  • 1 cup shredded cheese (cheddar or a Mexican blend)
  • 1/2 cup sour cream (or Greek yogurt for a healthier swap)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Start off by cooking the ground beef in a large skillet over medium heat. Use a wooden spoon to break it up into smaller pieces. Stir until browned, about 5-7 minutes. If using chicken or turkey, cook until no longer pink. Drain excess fat.
  2. Add the diced onion and bell pepper to the skillet. Sauté for about 4-5 minutes until the veggies are tender and the onion is translucent.
  3. Sprinkle in the taco seasoning and stir well. Add the black beans, corn, and diced tomatoes. Mix thoroughly to meld flavors, cooking for an additional 5-7 minutes.
  4. Once everything is heated and combined, assemble your bowls. Start with a base of rice, then pile on the meat and veggie mixture.
  5. Now, add toppings! Sprinkle shredded cheese on top, add avocado slices, a dollop of sour cream, and sprinkle with fresh cilantro. Squeeze a lime wedge over everything for a zesty kick.

Notes

For a vegetarian option, replace meat with lentils or additional beans. Use quinoa instead of rice for extra protein.
