Ingredients

  • 1 pound of dried red beans
  • 6 cups of water (plus more for soaking)
  • 1 medium onion, finely chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 pound of beef sausage
  • 2 bay leaves
  • 1 teaspoon of dried thyme
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • 3 cups of cooked white rice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Begin by rinsing the red beans under cold water, then soak them in a large bowl with enough water to cover them by a couple of inches. Let them soak for at least eight hours or overnight.
  2. Drain and rinse the soaked beans before putting them into a large pot. Add six cups of fresh water and bring to a boil.
  3. While the beans are cooking, heat the olive oil in a large skillet over medium heat. Add the onions, bell peppers, and celery, and sauté until they are soft.
  4. Slice the beef sausage and add it to the skillet. Cook for about 5 minutes until lightly browned.
  5. Once the beans are tender, add the sausage mixture to the pot of beans. Stir everything together, tasting for seasoning adjustments. Simmer on low for about 30 minutes.
  6. Serve the red beans over a hearty portion of cooked white rice, garnished with fresh parsley.

Notes

For a vegetarian option, substitute plant-based sausage or tofu. Serve with cornbread or a fresh salad for a complete meal.
