Ingredients

  • For the crust:
    • 1 ½ cups all-purpose flour
    • ½ cup granulated sugar
    • ¼ teaspoon salt
    • ½ cup unsalted butter, chilled and cubed
  • For the lemon filling:
    • 2 large Meyer lemons (zest and juice)
    • 1 cup granulated sugar
    • 2 large eggs
    • ¼ cup all-purpose flour
    • ½ teaspoon baking powder
    • ¼ teaspoon salt
  • For the streusel topping:
    • ½ cup all-purpose flour
    • ½ cup rolled oats
    • ⅓ cup brown sugar
    • ½ teaspoon cinnamon
    • ½ cup unsalted butter, melted

Instructions

  1. Begin by preheating your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 ½ cups of flour, ½ cup of sugar, and ¼ teaspoon of salt. Stir to combine. Then, mix in the chilled, cubed butter until the mixture resembles coarse crumbs. Press this mixture into the bottom of a greased 8×8-inch baking dish.
  3. Now it’s time to make the lemon filling. In a new bowl, whisk together the zest and juice of the Meyer lemons, 1 cup of sugar, and the eggs until fully combined. Add ¼ cup of flour, ½ teaspoon of baking powder, and ¼ teaspoon of salt.
  4. Pour the lemon filling over the crust you prepared earlier.
  5. For the streusel topping, combine ½ cup of flour, ½ cup of oats, ⅓ cup of brown sugar, and ½ teaspoon of cinnamon in a bowl. Stir in the melted butter until all the ingredients are moistened.
  6. Crumble the streusel topping evenly over the lemon filling.
  7. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is set.
  8. Once baked, let the bars cool in the pan for at least 20 minutes, then refrigerate for an hour before slicing.

Notes

Feel free to substitute with healthier options like coconut sugar, almond flour, or coconut oil.
