Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 4 cups chicken broth or vegetable broth
  • 1 cup fresh spinach
  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • Salt and pepper, to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Begin by heating the olive oil in a large skillet over medium heat. Add the minced garlic, stirring frequently.
  2. Now, add the orzo pasta. Toss it in the skillet for a minute or two.
  3. Pour in the chicken or vegetable broth. Stir gently and season with onion powder, red pepper flakes, and salt and pepper.
  4. Once the orzo is tender, stir in the fresh spinach and shrimp.
  5. Remove the skillet from heat and mix in the parmesan cheese.

Notes

For lighter alternatives, use whole wheat orzo or swap shrimp for chicken or tofu. Serve with extra parmesan and a side salad for a complete meal.
