Ingredients

  • 2 cups milk (dairy or non-dairy)
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blueberries
  • 1/4 cup chopped nuts (optional)
  • 2 tablespoons chia seeds or flaxseeds (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). In a mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  2. Whisk together the milk, maple syrup, and vanilla extract in another bowl. Pour this mixture into the dry ingredients and stir until everything is thoroughly moistened.
  3. Fold in the blueberries, and add any nuts or seeds if desired.
  4. Transfer the mixture to a greased 8×8-inch baking dish, spreading it out evenly.
  5. Bake for about 35 minutes until it has a firm texture and lightly golden top.
  6. Allow to cool for about 10 minutes before slicing and serving.

Notes

Serve warm with Greek yogurt, fresh fruit, or a drizzle of honey. Great for meal prep and can be stored in the refrigerator for up to 5 days.
