Ingredients

- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 cups milk (dairy or non-dairy)
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen blueberries
- 1/4 cup chopped nuts (optional)
- 2 tablespoons chia seeds or flaxseeds (optional)
Instructions
- Preheat your oven to 375°F (190°C). In a mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- Whisk together the milk, maple syrup, and vanilla extract in another bowl. Pour this mixture into the dry ingredients and stir until everything is thoroughly moistened.
- Fold in the blueberries, and add any nuts or seeds if desired.
- Transfer the mixture to a greased 8×8-inch baking dish, spreading it out evenly.
- Bake for about 35 minutes until it has a firm texture and lightly golden top.
- Allow to cool for about 10 minutes before slicing and serving.
Notes
Serve warm with Greek yogurt, fresh fruit, or a drizzle of honey. Great for meal prep and can be stored in the refrigerator for up to 5 days.
