  • 1 cup rolled oats
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 3 cups fresh or canned peaches, diced
  • 2 tablespoons sugar
  • 1 tablespoon corn starch
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish and line it with parchment paper, leaving some overhang for easy removal later.
  2. In a large bowl, mix together the flour, rolled oats, brown sugar, baking soda, and salt. Stir in the melted butter until the mixture resembles coarse crumbs, and reserve about 1 cup for the topping.
  3. Press the remaining mixture into the bottom of the prepared baking dish evenly to form the crust. Bake the crust for about 10-12 minutes, or until slightly set but not browned.
  4. While the crust is baking, prepare your peach filling. In a separate bowl, combine the diced peaches, sugar, corn starch, vanilla extract, cinnamon, and lemon juice. Gently toss to coat the peaches evenly.
  5. Now for the cheesecake swirl! In another bowl, beat the softened cream cheese with granulated sugar until smooth. Add the egg and vanilla extract, mixing until fully combined.
  6. Once your crust is ready, remove it from the oven and spread the peach filling over the crust evenly. Then, drop spoonfuls of the cheesecake mixture on top of the peaches. Use a knife or a skewer to swirl the cheesecake into the peaches gently.
  7. Sprinkle the reserved crumb mixture on top. Bake the bars for an additional 25-30 minutes, or until the filling is set and the topping is lightly golden.
  8. Allow the bars to cool completely in the pan on a wire rack. Once cooled, lift them out using the parchment overhang, slice into squares, and enjoy!

Notes

For a healthier twist, consider using whole wheat flour or a gluten-free alternative. Serve warm with vanilla ice cream or whipped cream.
