Description

Ingredients

  • 1.5 pounds boneless, skinless chicken thighs, cut into pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 2 cups white rice
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: Red bell pepper, toasted sesame seeds

Instructions

  1. Cook rice in salted water until fluffy.
  2. Season chicken, then sauté in oil until golden brown.
  3. Add garlic, ginger, pineapple, soy sauce, and honey; simmer 3–4 minutes.
  4. Serve over rice, garnish with green onions and sesame seeds.

Tips:

  • Use chicken thighs for juicier meat, add vegetables for color, or swap rice for brown/cauliflower rice.
