- 1 lb ground beef or chicken
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning (or homemade)
- 1 cup cooked rice (white or brown)
- 2 cups salsa
- 8–10 large flour tortillas
- 2 cups shredded cheese (cheddar, Monterey jack, or a blend)
- 1 cup Greek yogurt or sour cream (for serving)
- Fresh cilantro, chopped (for garnish)
- Optional: jalapeños, avocado, or other toppings
Instructions
- Preheat your oven to 375°F.
- Cook ground beef or chicken in a large skillet over medium heat until brown, about 5–7 minutes.
- Add taco seasoning, black beans, corn, and rice, stir to combine, and cook for another 3–4 minutes.
- Spread a layer of salsa in a 9×13-inch baking dish.
- Layer with a tortilla, meat mixture, cheese, and another tortilla, repeating until ingredients are used, finishing with a tortilla and topping with remaining salsa and cheese.
- Cover with aluminum foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes.
- Remove from the oven and let rest for 5 minutes before serving.
Notes
Allowing the bake to rest after cooking will help the layers set properly, making serving easier.
