Description

A hearty, flavorful burrito bake filled with layers of meat, beans, cheese, and spices, perfect for a comforting meal.


Ingredients

  • 1 lb ground beef or chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning (or homemade)
  • 1 cup cooked rice (white or brown)
  • 2 cups salsa
  • 810 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey jack, or a blend)
  • 1 cup Greek yogurt or sour cream (for serving)
  • Fresh cilantro, chopped (for garnish)
  • Optional: jalapeños, avocado, or other toppings

Instructions

  1. Preheat your oven to 375°F.
  2. Cook ground beef or chicken in a large skillet over medium heat until brown, about 5–7 minutes.
  3. Add taco seasoning, black beans, corn, and rice, stir to combine, and cook for another 3–4 minutes.
  4. Spread a layer of salsa in a 9×13-inch baking dish.
  5. Layer with a tortilla, meat mixture, cheese, and another tortilla, repeating until ingredients are used, finishing with a tortilla and topping with remaining salsa and cheese.
  6. Cover with aluminum foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes.
  7. Remove from the oven and let rest for 5 minutes before serving.

Notes

Allowing the bake to rest after cooking will help the layers set properly, making serving easier.
