  • 1 pound carrots, peeled and sliced into sticks

  • 1 teaspoon garlic powder
  • Optional: Fresh herbs like thyme or rosemary, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare your asparagus and carrots, snapping off woody ends from the asparagus and cutting the carrots into sticks.
  3. Combine the asparagus and carrots in a large mixing bowl with olive oil, sea salt, black pepper, and garlic powder; toss until well-coated.
  4. Spread the vegetables in a single layer on a parchment-lined baking sheet.
  5. Roast in the oven for 20 to 25 minutes, stirring halfway through.
