- 2 cups long-grain white rice, rinsed
- 4 cups chicken broth
- 2 tbsp olive oil (or vegetable oil)
- 12 oz Andouille or beef sausage, sliced
- 1 lb shrimp, peeled and deveined
- 1 cup onion, finely chopped
- 1 cup green bell pepper, diced
- 1 cup celery, diced
- 3 cloves garlic, minced
- 1 tsp paprika (smoked or sweet)
- ¼ tsp cayenne pepper (adjust to taste)
- ½ tsp dried thyme
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper, freshly ground
- ¼ cup green onions, chopped (optional garnish)
- 2 tbsp fresh parsley, chopped (optional garnish)
Instructions
- Cook rice in chicken broth until fluffy. Fluff and set aside.
- Heat oil in a skillet; cook sausage until browned. Remove and set aside.
- Sauté onion, bell pepper, and celery until softened; add garlic for 1 minute.
- Return sausage to skillet, add shrimp, and cook until pink and opaque.
- Stir in cooked rice; season with paprika, cayenne, thyme, salt, and pepper.
- Garnish with green onions and parsley; serve hot.
