  • 1 sheet puff pastry (810 oz), thawed but cold
  • 4 oz cream cheese, softened
  • 3 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, chopped (or thawed frozen)
  • 1 tbsp lemon juice
  • 1 tsp cornstarch
  • 1 egg (for egg wash)
  • 23 tbsp powdered sugar (optional, for topping)

Instructions

  1. Mix cream cheese with sugar and vanilla until smooth. Cook strawberries with sugar, lemon juice, and cornstarch until thickened; let cool.
  2. Roll puff pastry and cut into rectangles. Spread cream cheese in the center, top with strawberry mixture, fold edges, and brush with egg wash.
  3. Bake at 400°F for 15–20 minutes until golden. Dust with powdered sugar if desired.

Tips: Keep pastry cold, don’t overfill, try lemon zest or ricotta for variations.
