- 1 sheet puff pastry (8–10 oz), thawed but cold
- 4 oz cream cheese, softened
- 3 tbsp granulated sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, chopped (or thawed frozen)
- 1 tbsp lemon juice
- 1 tsp cornstarch
- 1 egg (for egg wash)
- 2–3 tbsp powdered sugar (optional, for topping)
Instructions
- Mix cream cheese with sugar and vanilla until smooth. Cook strawberries with sugar, lemon juice, and cornstarch until thickened; let cool.
- Roll puff pastry and cut into rectangles. Spread cream cheese in the center, top with strawberry mixture, fold edges, and brush with egg wash.
- Bake at 400°F for 15–20 minutes until golden. Dust with powdered sugar if desired.
Tips: Keep pastry cold, don’t overfill, try lemon zest or ricotta for variations.
