  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon vegetable oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sriracha (optional for heat)
  • 1/4 cup warm water (adjust for desired consistency)
  • 4 large tortillas or lettuce leaves
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1 red bell pepper, thinly sliced
  • 1 cup bean sprouts (optional)
  • Fresh cilantro or mint for garnish (optional)

Instructions

  1. Start off by marinating your chicken. In a bowl, combine diced chicken with soy sauce, lime juice, vegetable oil, minced garlic, and ginger. Let it sit for about 10 minutes.
  2. While the chicken marinates, prepare the peanut sauce. In a small bowl, mix together the peanut butter, soy sauce, lime juice, honey, and sriracha. Add warm water gradually until you reach your desired sauce consistency.
  3. Heat a skillet over medium heat and add a splash of oil. Cook your marinated chicken for about 7-10 minutes or until thoroughly cooked.
  4. Assemble your wraps! Take a tortilla or lettuce leaf, spread a spoonful of peanut sauce on it, and layer with cooked chicken and prepared veggies.
  5. Drizzle more peanut sauce on top, roll it up tightly, and secure with a toothpick or wrap in parchment paper.
  6. Enjoy your wrap with a side of extra veggies or a salad.

Notes

For a vegetarian option, replace chicken with tofu or tempeh. Use lettuce wraps for a low-carb alternative.
