Ingredients

  • 2 medium zucchinis
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (gluten-free if desired)
  • 2 large eggs
  • 3 garlic cloves, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)
  • Olive oil (for drizzling)

Instructions

  1. Start by preheating your oven to 400°F (200°C).
  2. Wash and dry the zucchinis, then grate them using a box grater or food processor.
  3. Place the grated zucchini in a clean towel and squeeze out excess moisture.
  4. Combine the grated zucchini, mozzarella, Parmesan, breadcrumbs, eggs, minced garlic, oregano, salt, and pepper in a large bowl. Mix well.
  5. Prepare a baking sheet by lining with parchment paper or greasing with olive oil.
  6. Form small balls or patties out of the mixture, about the size of a golf ball, and place them on the prepared sheet.
  7. Drizzle the tops lightly with olive oil.
  8. Bake for about 20 minutes or until golden brown and firm to the touch.

Notes

For a vegan option, substitute cheese with plant-based cheese and use flaxseed meal instead of eggs. Serve with marinara or garlic aioli for dipping.
