- 2 medium zucchinis
- 1 cup grated mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (gluten-free if desired)
- 2 large eggs
- 3 garlic cloves, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (optional)
- Olive oil (for drizzling)
Instructions
- Start by preheating your oven to 400°F (200°C).
- Wash and dry the zucchinis, then grate them using a box grater or food processor.
- Place the grated zucchini in a clean towel and squeeze out excess moisture.
- Combine the grated zucchini, mozzarella, Parmesan, breadcrumbs, eggs, minced garlic, oregano, salt, and pepper in a large bowl. Mix well.
- Prepare a baking sheet by lining with parchment paper or greasing with olive oil.
- Form small balls or patties out of the mixture, about the size of a golf ball, and place them on the prepared sheet.
- Drizzle the tops lightly with olive oil.
- Bake for about 20 minutes or until golden brown and firm to the touch.
Notes
For a vegan option, substitute cheese with plant-based cheese and use flaxseed meal instead of eggs. Serve with marinara or garlic aioli for dipping.
